It's Raining. It's Pouring. It's time for SOUP!

Who doesn't want to curl up on the couch with a hot bowl of soup? Enjoy this delicious Lentil Minestrone soup courtesy of our awesome local grocer - Sacramento Natural Foods Co-op!

Lentil Minestrone

2 T. extra virgin olive oil
1 c. French lentils
2 c. chopped onion
2 T. tomato paste
1/4 c. chopped parsley
4 cloves garlic minced
3 carrots chopped
1 c. celery diced


2 bay leaves
8 branches Parsley
6 sprigs thyme
9 c. water or vegetable stock
soy sauce or salt and pepper to taste
1 bunch greens chard, spinach, broccoli rabe

Cooked pasta of your choice


1. Cook the onions in a wide soup pot with the olive oil until lightly browned, about 10 minutes. Add the tomato paste, parsley, garlic, vegetables and 2 t. salt and cook 3 minutes more.

2.  Add lentils, aromatics, and water and bring to a boil. Lower the heat and simmer partially covered for 30 minutes. Add salt, pepper, or soy sauce to taste.

3. Remove the aromatics and add the greens and pasta if including. Serve with a drizzle of olive oil.
